I have not been a fan of breakfast cereals as they are loaded with sugar and refined carbs. But recently I was introduced to a higher protein cereal that is quinoa based. Quinoa is a gluten free whole grain that is a fantastic source of B vitamins, iron, and other minerals! So I have become a fan of cereal again but only healthy cereals such as this! Try this on a cool morning and you will be in heaven!

Ingredients: (please use organic when possible)

2 1/2 cups almond milk
1 cup yellow quinoa (rinsed)
1 apple, cored and diced
1/2 cup raisins
1 Tablespoon agave nectar or honey
1 teaspoon cinnamon
1/2 cup walnuts (to be sprinkled on at the end)

Bring milk to a light boil and add in a pinch of sea salt. Stir in the quinoa and diced apples, reduce heat to low and simmer until quinoa is tender (about 15-20 minutes). Remove from heat and stir in raisins, sweetener and cinnamon. Sprinkle with walnuts and top with extra almond milk if desired. If you have leftovers, gently heat with extra almond milk the next morning and serve!
